High Intake of Trans Fat Could Increase Risk of Colon Cancer

The American Journal of Epidemiology is reporting that a study done at the University of North Carolina shows that people who ate the most trans fatty acids developed more pre-cancerous polyps than those who ate less trans fatty acids.  Trans fatty acids are formed by processing vegatable oils and are found in many snacks, crackers, baked goods, and other packaged food products.  Eating trans fats increases the levels of LDL or bad cholesterol. If pre-cancerous polyps are undiagnosed and untreated they can lead to colon cancer.  The study concluded this is more reason that people should limit their intake of trans fatty acids.
